My dad and I are peanut lovers. I have vivid memories of my dad and I in the kitchen figuring out new ways of roasting peanuts so they tasted exactly like the ones sold by the street vendors on wooden carts with large wheels. These peanut snacks were served in cones made of newspapers, neatly stacked and pushed inside huge jute bags overflowing with raw peanuts. These vendors roasted their peanuts on a grill in large iron woks filled with sand. I can recall the smell of the salted slightly damp peanuts being roasted, it’s almost like it happened a few hours back. 

Our little guy shares this love for peanuts. However, he loves the fried masala peanuts that you find in stores. This is an attempt to make a healthier version of the fried peanuts. These are microwaved with no oil and can be made in a matter of 7 mins. They are delicious with a cup of piping hot cardamom tea on a wet evening. A book and a quiet reading corner will only enhance this experience :). 

Ingredients : 

1/2 cup of peanuts washed and drained

4 tbsp of chickpea flour

2 tbsp of rice flour

Salt to taste

Red chilli powder about 1/2 tsp

1/2 tsp of coriander and cumin powder each

1/2 tsp of garam masala

1/4 tsp of turmeric powder

1/2 tsp of chat masala

Mix the chickpea flour, rice flour and masalas together. Add the peanuts and mix.  Add a few drops of water if you need so the flour coats the peanuts well. Spread this on a paper towel and place it in the microwave.   

 
Roast for 5 mins on high. Check for crispness. Roast for longer if you need to since very microwave temperature differs. Let sit for a few minutes before serving.
