This is a basic green chutney that can be used as a dip with pretty much anything or as a spread over bread for a really quick and delicious snack or breakfast in our case :). I use coconut in here but the shelf life could be longer if you didn’t use coconut. Store in the refrigerator.
Mint – I bunch
Cilantro – 2 bunches
Garlic – 3 – 4 cloves
Green chillies – 3 /4 (reduce number of chillies if you like it milder)
Coconut – grated and unsweetened -1/2 cup packed
Juice of a lemon
Put all ingredients in the blender and grind together with a little water. Be careful with the water you add so it is not too thin in consistency. I have a delicious paneer side dish I make with this chutney. Post coming up sometime soon. I have also heard that this chutney works very well with any white fish for those of you who eat fish! Marinate the fish in this chutney and cook with sautéed onion, tomatoes and a thinned version of this chutney.
