As a child, I have very fond memories of Diwali. New clothes, spending time with friends, sweets, savories, the beautiful bright colors of rangoli and the joy the festival brings, is all etched in my memory. But this post is about my experiences of recreating Diwali for my family in a foreign land. I have tried over the past few years to bring as much as i can from my experiences so my little one at least knows what the festival is about. In my quest to do so,I always make a few sweets and savory items, just like my mom used to.
Amongst all the sweets that were made and consumed, my mom’s seven cup cake and my best friend’s mom’s badam cake are the most memorable to me. This diwali, I decided I wanted to try my hand at my friends mom’s badam cake! So, aunty although I wasn’t as successful, this one is for you :)!
This recipe is not mine and I think I did a few things wrong here, so please make sure you follow it to the T if you want badam cake. But if you want badam laddoo you will find that below too 🙂 Here is a pic of mine –
Almonds/ Badam – 1 small cup
sugar – equivalent of the badam paste
ghee – 4 -5 teaspoons
saffron – 3-4 strands
milk – 1/2 cup
Soak almonds in hot water for about 30 mins. Remove skin and grind to a smooth paste with 1/2 cup milk. In a heavy bottom pan, add sugar, almond paste, saffron and keep stirring till the mixture leaves the sides of the pan. In the meanwhile, grease a tray and once the mixture is ready pour it onto the greased tray. Let cool and cut into pieces.
Now I think I did not cook it enough, so when I put it on the tray I was not able to cut it up. I thought a lot about what to do and came up with the idea of making laddoos instead of cutting into pieces. Almonds and sugar ans ghee tastes great in any form – laddoos or cake. I was able to recreate the taste of the badam cake aunty made, so I was happy! I am the only one in our house with a sweet tooth. But this is one thing the little one and the hubby will totally come back for seconds.!
